Lazy (wo)man’s breakfast- overnight oatmeal

Back in December when I worked overnight shifts in the ER at our public county hospital, I used to worry over what to eat, or when to eat breakfast. After all, if I’m directly going home to my bed to hibernate for the next 6 hours, I wouldn’t want to fuss around with making breakfast when my eyelids were barely open. So I adopted this overnight oatmeal recipe that I could prepare before my night shift and just bring it to the hospital with me in a jar, and let it soak in all the juiciness in the fridge while I’m hard at work saving lives (or just trying to not mess up). By the time my shift was over, I had a nutritious and delicious breakfast waiting for me, and I could finish eating it on the train home, and go directly to bed after that. What a treat!

Nowadays I no longer work night shifts, but the overnight oatmeal stuck with me. So I’ll share it with you today. And you can put pretty much whatever you like to eat in it to suit your tastebuds. Win!

Overnight Oatmeal

Ingredients:

  • 1/2 cup oatmeal
  • 1/2 cup milk
  • 3 spoonfuls of greek yogurt
  • 1 Tbsp chia seeds
  • 1 handful of almond slices
  • blackberries and blueberries, strawberries

Mix oatmeal in milk and greek yogurt. Mix in chia seeds. Top it off with almonds and fruits. Add granola or dark chocolate bits for a sweeter version.

Store in the fridge overnight. Enjoy in the morning!
