Otherwise known as Triple A salad, this accidental invention of mine goes back to my obsession with arugula, the tiny little leafy green that goes a long way in its health benefits. It’s slightly bitter and peppery, and packed with vitamin A and C as well as potassium. You can make it into pesto, drop a few leaves on a pear and gorgonzola pizza
, or mix it into a delicious summer salad! Today I’m introducing to you a way to make it the protagonist in a salad, balanced by the sweetness of apples and creaminess of avocado, all tossed in a honey mustard dressing. Here it goes..
Apple Arugula Avocado Salad
- arugula, 1 pack
- half an apple (Gala or Fuji), chopped into small pieces
- 1 whole avocado, diced into chunks
For the dressing:
- olive oil, 1.5 Tsp
- honey mustard, 1 Tsp (substitute with Tahini paste if desire a less sweet and more nutty version)
- honey, 0.5 Tsp
Whisk all the ingredients in the dressing together. Pour over salad ingredients, mix well. Best served after chilled in the fridge for 1 hour.
