I am very picky about my desserts usually, and dislike those that are too sweet, too chocolate-y or too mushy (I know….I sound like a criminal). On top of that, my irrational fear of using the oven adds to my resistance to baking sweets. But I’ve always had a soft spot for crispy things– mint bark, burnt cookies, pie crusts, you name it.
And this almond bark is crunchy, buttery, nutty and almost healthy with all the almonds that top it off! This guilt-free dessert makes for a great party food and an awesome house warming gift wrapped up in a tie-string bag!
- egg whites from 2 large eggs
- sugar, 2/3 cup (can reduce based on taste)
- flour, 1/2 cup
- butter 2 Tbsp
- lots of almond flakes
Beat egg white and sugar until bubbly.
Add in flour slowly and mix well. Melt the butter in microwave and add it to the batter.
Add in almond flakes and mix gently with a spatula.
Ladle batter in tablespoons on non-stick baking sheet, and spread it with the back of your spoon into individual circles. Make sure to space out the barks well to avoid batter turning into a pool.
Bake on the lower rack at 300 F for 15 minutes. Bake until all barks are golden brown. Then remove baking sheet from oven and let the barks cool and harden completely before peeling them away.
